Honey Lime Quinoa Fruit Salad

Try this great spring/summer recipe. Use as a side dish or snack. It’s packed with vitamins, carbs, and protein to give you the energy you need between meals, as a side to lunch or even a dessert.

Serves 4-6


1 cup Uncooked Quinoa (tricolor looks the best)
Dash of Kosher or Sea salt
1 Tbsp Walnut, Flax, Pumpkin, or Avocado oil
1½ cup Strawberries, sliced
1 cup Blackberries
1 cup Blueberries (or other berries)
1 Mango, diced
1 Tbsp Honey
2 Tbsp fresh squeezed Lime Juice
1 Tbsp chopped Basil or Mint for garnish


  • Rinse and prepare the quinoa according to the package. Let quinoa cool to room temperature, then season with salt and 1 Tbsp of walnut, flax, pumpkin, or avocado oil. If your pantry doesn’t have any of these, extra virgin olive oil will do just fine as well.
  • In a large bowl, combine quinoa, strawberries, blueberries, and mango.
  • In a small bowl combine with a whisk, the honey and lime juice. Drizzle over the fruit salad and toss to coat. 
  • Garnish with fresh basil or mint.
